Japanese
strawberries are famous for their large size, very sweet taste, and pleasing
fragrance. Some strawberries grow to weigh as much as 40 g each. Freshly
picked Japanese strawberries can be flown to various locations. Even in
America this unique Japanese import can be enjoyed. The most common varieties
are Toyo-no-ka, Sachi-no-ka and Tochi-otome.
There are many strawberry farms in the Kanto and Kyushu regions of Japan.
Competition between these two regions is intense and both have worked
hard to improve their cultivars. This has resulted in Japanese strawberries
that are big, very sweet and juicy, have a glossy red color and last a
long time.
It is best to keep these strawberries unwashed when storing. Place them
on a thin pad, being careful to not stack them on top of each other, arrange
in neat rows with the stem sections facing down, cover with a plastic
wrap and then place in a refrigerator. In this manner, they should last
for up to three days. These strawberries can be easily damaged if they
become wet or if the stem sections are removed. If the strawberries will
not be eaten for some time, wash them thoroughly, remove the stems, dry,
place in a container with a good seal and then store in a freezer.

Amaou Strawberries
The
Amaou Strawberries (pronounced "ah-mah-oh") is a variety produced in Fukuoka.
Red and large on the outside and perfectly sweet and tart inside. Amaou
is simply delicious and quite popular in Japanese and Asian markets. Strawberries
are excellent source of Vitamin C. Five to eight Amaou strawberries provide
enough Vitamin C to satisfy the body's daily requirements.

Bruschetta
Ingredients (makes 8)
Baguette ................................8 slices (1/2 inch thick)
Unsalted butter .....................1 tbsp
Amaou Strawberry ...............8
Cinnamon ..............................1/2 tsp (ground)
Cardamom .............................1/2 tsp (ground)
Banana....................................1/2 (diced)
Kiwi ......................................... 1/2 (peeled & diced)
Mascarpone Cheese ............2-3 tbsps
Brown Sugar............................3 tsps
Salt ............................................to taste
Honey........................................for drizzling
How to cook
1. Toast the bread lightly and butter on one side.
2. Halve 4 of the strawberries and dice remaining 4 berries. Set aside.
3. In a small bowl, mix 2 tsps sugar, cinnamon, cardamon and salt, and sprinkle evenly over buttered side of toast. Broil the toast until the sugar dissolves and begins bubbling, about 30 ~ 60 seconds, and let cool.
4. In a bowl, add fruit and 1 tsp sugar and toss lightly. spoon 1/8 of the mixture on toast, and top with Mascarpone cheese. Top with the remaining strawberry halves and drizzle with honey.
